1 can (12 ounces) artichoke hearts, drained and
rinsed
14 ounces chicken broth
1 tbsp lemon juice
1/1 to 3/4 tsp salt
pepper to taste
1 cup light cream

Directions:
Directions:
Place the artichokes in a blender with broth. Puree at high speed for about 30 seconds. Place in saucepan with lemon juice, salt and pepper. Heat just to boil. Remove from heat and stir in cream. Do not boil. Can be served hot or cold.
This is about 2 to 4 cups.
