Salt & pepper to taste
6 half breast of chicken
1/2 stick butter
2 tsp. oil
2 (10oz.) pkg. frozen spinach
1/2 cup sharp cheddar cheese
1/2 cup mayonnaise
1 (10oz.) cream of chicken or celery soup
1 tbsp. lemon juice
1 tsp. curry powder or more to taste
1/2 cup corn flake crumbs

Saute salt and pepper and chicken lightly in butter and oil for 10 minutes. Cook spinach; drain or squeeze dry. Spread the spinach on the bottom of a 2 quart casserole dish. Top with chicken breast. Mix mayonnaise, soup and lemon juice. Pour mixture over chicken breasts. Sprinkle with cheese. Top with crumbs. Bake at 350ºF for 25 minutes. Serves 6.
