1/2 cup margarine
1 onion, finely chopped
2 stalks celery, finely chopped
1 apple, peeled and finely chopped
1 tsp. curry
1/4 cup flour
4 cups chicken stock (4 cubes)
1 small head cauliflower, cut into small flowerettes
1 egg yolk, slightly beaten
1 cup light cream or milk
Salt, pepper and parsely to garnish

Melt margarine and saute onion, celery and apple in a large fry pan. Mix curry powder and flour. Sprinkle over mixture, stirring for 2 minutes. Gradually stir mixture into chicken stock. Bring to a boil. Add cauliflower. Cook, covered, 10 minutes. Combine egg yolk and cream/milk. Gradually stir into mixture. Heat but do not boil. Serve either hot or cold. Makes 8 serving.

Flavor improves if made ahead of time. Can be frozen. Reheat slowly.
