1 - 3 lb pork roast
2 - limes (cut into 6-8 wedges)
2 - Tablespoon garlic (minced)
1 - bottle dark beer
1 - T Salt
2 - T Cracked pepper

Optional: 2 T cornstarch or flour for gravy

Directions:
Directions:
Place beer, garlic and 4 lime wedges in crock pot (turn on high heat).

Trim excess fat from pork roast; make slits in roast (about 4); place lime wedges and garlic in slits. Sprinkle with salt and pepper (rub into meat). In cast iron skillet, sear roast for 5 minutes on each side. Place in crock pot and cook on high for 1 hour then set to low temperature for additional 2 hours.

To make gravy: Use rendering from cast iron skillet, add cornstarch or flour, and 3/4 cups of liquid from crock pot. Add additional cracked pepper to taste.
