2/3 cup butter, softened
1 cup packed brown sugar
1 egg
1 tsp. vanilla
1 1/2 cups rolled oats (not instant)
1 cup all purpose flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/4 tsp salt
2 cups pitted dates
1 tbsp. grated orange rind
2/3 cup orange juice

Directions:
In large bowl beat butter with sugar until light and fluffy. Beat in egg & vanilla in separate bowl combine oats & flour, baking soda, and baking powder, and salt. Gradually stir into butter mixture until blended cover with plastic wrap & refrigerate for at least 30 mins, or up to 1 day.
Meanwhile, chop dates. In small heavy saucepan ove medium heat, bring dates, orange juice, orange rind and 1/3 cup water to boil, stirring often, reduce heat to low, cover & simmer for 45 minutes or until dates are very soft. Uncover and cook stirring constantly for 5 minutes or until mixture forms thick sticky paste. Let cool completely (filling can be prepared, covered, and refrigerated for up to 2 days)
Using hands roll heaping tsp. of dough into balls, place about 1 inch apart. Bake in 350 degree oven for 10-12 minutes on greased baking sheet until golden/edge is crispy and center is still soft- transfer cookies immediately to rack- let cool completely. Spread date puree over smooth side of 50 percent of cookies-sandwich with remaining cookies smooth side down.
