1 cup of sherry
1/2 stick of butter
3 cups onions (diced)
3 cups celery (diced)
1/2 tsp garlic
3/4 T sugar
2 1/2 lobster base (I use Better Than Bouillon©)
2 qts heavy cream
1 1/2 lb claw crabmeat (or shrimp)
3 sticks of butter
3/4 cups of flour

Directions:
Directions:
Make roux using 3 sticks of butter and flour. Set aside.

Saute' onions, celery and garlic until onions are tender. Deglaze with sherry. Add lobster base, sugar, salt and heavy cream. Gentle boil then add roux. Add crabmeat and remove from heat. Serve warm or hot. Delicious.
