4 Cups Boiling Water
1/2 Cup Butter
5 Cups Instant Potato Flakes (we like Idahoan)
1 Cup Powdered Milk
2 Tsp. Salt
2 Tsp. Sugar
1-1/4 Cups Flour (or) 1/2 Cup Flour to 2 Cups Potato Mixture

Boil water and butter together. Measure and mix the potato flakes, powdered milk, and butter over the potato mixture and mix to hydrate all the potato flakes. Cover the bowl with a wet towel and refrigerate overnight or until cold. The next day, add flour. Do not add too much flour, as the mixture will not hold together. Roll out very thin. Cook on a lefse grill and use a lefse stick to remove from the pastry cloth.

Work Together: Make this recipe for special occasions or just anytime you get hungry for lefse. Ya Ya.. This recipe is easier to make with at least 2 people working together, one rolling out the dough and one "on the grill." Helen and Patti found the recipe when a local hardware store was "cooking Norwegian" around Christmas. Lefse is a staple in Norwegian households around the world. This is an easy recipe, and much less difficult than making lefse with real potatoes which is an all-day task.
