1/4 cup seasoned rice wine vinegar
1/4 cup chopped fresh basil (or 2 tbsp. dried)
1 tsp sugar
salt
freshly ground black pepper
1/2 cup olive oil
8 ears of corn, grilled in the husk, kernels removed (or 2 cups of niblets ;) )
1 sweet onion halved and thinly sliced
1 pint cherry or grape tomatoes, halved
8 ounces bleu cheese, crumbled, (don't skip this!!)
fresh basil sprigs for garnish

Directions:

Combine the vinegar, basil, sugar, 1/2 tsp salt, 1/4 tsp pepper and oil in a blender and blend till smooth. Can be made up to two days in advance. Bring to room temperature before using.

Combine corn kernels, onion, and tomato in a large bowl. Add the dressing and toss to coat. Season with salt and pepper. Let sit at room temperature 30 minutes before serving. Top with bleu cheese and garnish with basil sprigs just before serving.
