1 tongue, medium sized (pork, veal or beef)
1 cup tomatoes
1 tbsp. onion, minced
1 tsp. butter
1/2 cup vinegar
1 tsp. salt
1 tsp. sugar
1/8 tsp. red pepper
1/2 tsp. black pepper

Directions:
Directions:
Place skinned cooked tongue in a casserole. Cover with a sauce prepared from the above ingredients. Bake for 1 hour in a slow oven or simmer on top of stove.

Preparation of Tongue:
Wash tongue in cold water, trimming blood vessels, etc. Cook (simmer so that there is no movement in water) in salted water (2 tsp. salt for each quart of water) until done. For a small tongue, cook about 1 1/2 hours. Plunge in cold water and skin.
