3/4 c Quinoa, thoughly rinsed
3/4 lb Chicken breast baked
2 c black beans - drained and rinsed
1 c frozen Corn Kernals
1/2 c chopped Red Bell Pepper
1/2 c chopped Green Bell Pepper
1/2 c chopped Red Onion
1/4 c thinly sliced Scallions


Cilantro Vinaigrette
1/3 c Olive Oil
3 TBS Sherry Vinegar
1 TBS Dijion Mustard
1/2 tsp Salt
1/2 tsp fresh ground pepper
3 - 4 TBS fresh Cilantro Leaves or 2 TBS dried
6 cherry tomatos halved

Directions:

Cook 1 Quinoa in 2 cups water When water comes to a boil remove from the stove and let set for 30 min.
Cut chickne breast in to small bite size pieces.
Add all the ingredients together except the dressing

In jar place all salad dressing ingredients and shake together until well blended. Stir into salad Let set for 2-4 hours in fridge.
Just before serving - top with tomato halves
