Ingredients: -Lemon Coconut- 11 oz pitted dates (deglet noor) 7.5 oz raw cashews 3 oz raw almonds 2 tbsp or more lemon juice zest from one large lemon 33g shredded unsweetened coconut
-Cherry Almond- 6 oz pitted dates 9 oz unsweetened dried cherries 8.5 oz raw almonds 1 tsp almond extract
-Macadamia Fig- 7 oz pitted dates 9 oz dried mission figs 4 oz raw cashews 3 oz macadamia nuts 1 tsp coconut oil
-Gingersnap- 8 oz pitted dates 4.5 oz raw almonds 3.25 oz pecans 1 oz ginger (appx 1"x1" piece, minced) 1 1/2 tsp cinnamon 1 tsp ground cloves

Directions:Line an 8 x 8 square pan (preferably with straight sides) with parchment paper.
Process the nuts in your food processor until the pieces are small, but not so much that you have nut flour. Place the nuts in a mixing bowl, add any dry ingredients, and mix well to combine.
In your processor, chop the dried fruit until a paste begins to form, then add the liquid ingredients and/or spices and continue processing until you have a sticky paste.
Add the dates to the nuts and mix until well combined. You may have to use your hands to do this. When everything is evenly distributed press the mixture into your parchment lined pan. Try to get the surface as even as you can, and press hard to ensure your finished bars stay together. A spare piece of parchment and a dough scraper can help with this.
Place the pan in the refrigerator for at least 20 minutes so the bars firm up. Cut into 16 pieces and wrap individually in plastic wrap. These keep nicely in the freezer for a few months. |

Notes: When I developed these recipes, all ingredients were weighed so I could duplicate the results consistently. Due to variations in ingredients (dried fruit with a higher water content, etc), you may need to adjust quantities of fruit or nuts. Before you press the mixture into your pan, you should have something that holds together reasonably well when formed into a ball, otherwise the bars will fall apart when cut.
