10 med. potatoes, cubed
1 large onion, diced
2 large carrots, shredded
3 tbsp. dried parsley flakes
1/2 stick butter
1 can cream of mushroom soup or
1 can cream of chicken soup
1 large can evaporated milk
salt & pepper to taste

Directions:
Directions:
Cook potatoes, onion, carrots, and parsley flakes for approx. 20 minutes, or until tender. Blend soup with evaporated milk, stir into potato mixture. Add butter, salt and pepper. Serve with crackers or corn bread.

Memories: I remember all the kids playing ball in the field across from Aunt Mahalia's house. The field belonged to Preacher Ruff, but he allowed everyone to play there.
