4 zucchini,medium
1 c chopped walnuts,or pecans
2 1/2 c flour
1 /1/2 tsp. baking powder
1 tsp baking soda
1 tsp each of cinnamon and salt
1/4 tsp nutmeg
6 oz. unsweetened chocolate
2 c sugar
4 eggs
3/4 c vegetable oil
1 tsp. vanilla
1 c milk
1 tbsp vinegar or lemon juice

Preheat oven to 350 F Grease an angel food pan or 2 loaf pans. Grate unpeeled zucchini, measure 3 c place in a J cloth or cheese cloth, gently wring out as much moister as possible. Should measure 2 c. Add nut's and set aside. Measure flour powder, soda and spices. Stir well with fork. Set aside. Melt chocolate on power 3 in microwave. Place sugar, eggs and oil in large bowl. Beat on high speed until lemon colored. Reduce to low and gradually beat in chocolate. Stir in vanilla. Stir milk and vinegar together then alternately stir in dry ingredients and milk. Stir until well mixed. Add zucchini and stir well. Pour into pan. Bake 1 hour and 15 minutes or until toothpick entered comes out clean. Leave in pan until completely cool.

This is a recipe I got from the Chatelaine Magazine in August of 1981, and I've been making it every year as it has become a family favorite.
