Salad Dressing:
2 lemons juiced
1/2 tsp. Dijon mustard.
1 shallot minced
1/4 tsp. salt and pepper
1 generous dash of honey
6 tbsp. canola oil
1 tsp. chopped tarragon
2 tbsp. water

Salad:
1 head Boston lettuce
2 mutsu apples
6-8 oz blue cheese (Rosenberg)
2/3 cup lightly toasted walnut pieces

Directions:
Directions:
Mix together salad dressing ingredients. Whisk together and set aside. Tear pieces of Boston lettuce in salad bowl, core and cut apples in wedges, crumble blue cheese and add walnut pieces. Toss with salad dressing and serve.
