8 oz. bow tie pasta
3 Tbsp. plus 1 Tbsp. extra-virgin olive oil
1 cup corn kernels

1 cup shelled edamame
1 medium red bell pepper
1/2 to 1 cup shredded carrots
1/2 cup grated Parmesan cheese

Directions:
Directions:
Cook pasta according to package directions. Drain and toss with 1 tablespoon olive oil. Quick-sauté the vegetables. In a large bowl, toss the cooled pasta with the vegetables. Drizzle with remaining 3 tablespoons of olive oil and toss to coat. Add Parmesan cheese and salt and pepper to taste.
