1 cup all-purpose flour
3/4 cup yellow cornmeal
1/2 cup shredded sharp cheddar cheese
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. ground cumin
1/4 tsp. salt
4 bacon slices, cooked, drained, crumbled
1-1/4 cup low-fat buttermilk
1/4 cup canola oil
1 large egg, lightly beaten

Preheat oven to 375 degrees. Lightly spoon flour into dry measuring cup, level with a knife. Combine flour and next 7 ingredients (through salt) in a large bowl, stirring with a whisk. Make a well in the center of the mixture. Combine buttermilk, oil and egg in a bowl, stirring well with a whisk. Stir in bacon. Place 12 muffin-cup liners in muffin cups and line with cooking spray. Divide batter evenly among baking cups. Bake at 375 degrees for 15 minutes until wooden tooth pick inserted in the center comes out clean.
