2 medium cucumbers, peeled
3 Tbsp. rice vinegar
2 tsp. sugar
½ tsp. salt
½ tsp. finely chopped shredded lime peel
½ tsp. grated fresh ginger
¼ tsp. crushed red pepper
2 Tbsp. thinly sliced fresh basil

Using a vegetable peeler, peel think strips of peel from cucumbers. Halve cucumbers lengthwise. Seed cucumbers and slice crosswise into ¼ inch thick slices
In a medium bowl, combine cucumbers, rice vinegar, sugar, salt, lime peel, ginger and crushed red pepper. Toss to mix let stand for 15 minutes. Stir in basil, serve with slotted spoon.
