2 pkg. 3 oz Lime jello (or 1 big box)
1/4 t salt
1 C boiling water
1 T lemon juice
1/8 t ginger
6 oz cream cheese

Directions:
Directions:
dissolve jello ND SALT IN BOILING WATER
Drain pears measuring out 3/4 C syrup (add water if necc.)
Dice pears and set aside in frig
Add pear syrup, and lemon juice to gelatin
Measure 1 1/4 C into a jello mold
Chill til set but not firm
Meanwhile soften cream cheese in a small mixing dish
Add remaining gelatin and mix til smooth
Add ginger
Fold in pears
Spoon into mold
Chill until firm
Unmold onto crisp lettuce bed
Top with remaining pear pieces and can add a cherry for color
Spoon into mold

I made this for a dinner at the farm and Grandpa really liked it a lot and told me that lime was his favorite jello. So over the years, it became a tradition to bring it to Thanksgiving, Easter and other family get togethers. I sometimes change measurements to be sure I have enough to fill the mold. It's better if the cream cheese is soft so I get that out first and let sit til ready to use.
