Olive oil (or any other oil you like)
2 chicken breasts, cubed
Red pepper flakes
2-3 heads of broccoli
2 cans coconut milk (I use one can of regular, one can of light so the sauce isn't as thick)
1 red bell pepper, sliced
1 can bamboo shoots
1 can sliced water chestnuts
2-3 teaspoons curry paste

Directions:

Heat oil in a large pan. Add chicken and red pepper flakes. Cook chicken thoroughly. Add broccoli and saute for about five minutes.

Add coconut milk, pepper, bamboo shoots, water chestnuts, and curry paste. Cook on medium heat for about half an hour, or until broccoli is soft.

I like to serve this over cauliflower 'rice.' I use my food processor to chop cauliflower to the consistency of rice. Fry it up with a little oil and cayenne pepper. You can also put it in a bowl with a little water and microwave it if you prefer steamed 'rice.'

This feeds two for dinner with leftovers for three or four lunches.
