2 flank steaks (3 to 3 1/2 lbs total)
1 1/2 tbsp chili powder
1 tsp salt
1 tsp pepper
the juice and zest of 2 medium limes
3 cloves of garlic
1/2 cup cilantro leaves, loosely packed

Combine all ingredients except flank steak and process or blend until smooth.

If there are any loose membranes on the backside of the steak, carefully remove them with a knife. Then, with the spiky side of a meat mallet pound the flank steak out until it’s a fairly even thickness across. Do both sides. This step is optional but I find it really helps tenderize the meat, and it cooks more evenly.

Put the steaks in a large dish, and smear both sides of each steak with the spice mixture. Reserve a couple spoonfuls for grilling. Place in the fridge to marinate for 30 minutes or longer. If you are really pressed for time you can throw them right on the grill, but you’ll get the best flavor if you let them sit.

Preheat your grill so it’s nice and hot. Since flank steak is lean you shouldn’t have to worry about flare-ups. Place the steaks on the grill, smear the top side with the reserved marinade and season with salt. Do the same thing to the other side after you flip it. Cook them for 6 to 8 minutes per side. I like mine rare so you may have to adjust the cooking time if you prefer your steak more well done. If in doubt, test it with your instant read thermometer.

When the steaks are done, remove them from the grill and let them sit for at least 5 minutes. To serve, slice the meat across the grain into strips.

Don’t have a thermometer? It’s a must have for those of us who have never worked in a steak house. No excuses… they are cheap and most grocery stores have them for under $5.
