3/4 c. water
2 T. olive oil
2 c. flour
1 tsp. sugar
1/2 tsp. salt
2 tsp. dry yeast
( I always double the recipe)

Sauce:
2 15 oz cans Pizza sauce (I like Contadina)
2 15 oz cans tomato sauce
1/2 tsp. Italian seasoning
1/2 c. Parmesan cheese

Crust: if you are blessed with a bread maker, use the dough setting for the crust. Check that your bread machine can handle the amount of dough if you double the recipe. Most can.

Measure out flour in large bowl, add the salt and stir in. Combine warm water, oil, sugar and yeast, add to flour and stir in.

When dough forms a ball turn on to flour-covered counter and gently knead for 5 minutes.

Lightly oil a large container with lid (an ice cream bucket is perfect). Place dough ball in and gently roll around to coat, so it can rise without sticking. Let rise about an hour.

Sauce: combine all cans of pizza sauce and tomato sauce in med sized pan. Add seasoning. Slowly bring to a simmer. Gently simmer for 2-4 hours until reduced by about 50%, and very thick. This sauce will bubble and spit as it thickens, so a deep pot and not-your-favorite shirt is advised.

My favorite kitchen tool in the world is a wooden spoon that is flat on the end like a spatula. This is the best for stirring the sauce every half hour, so the bottom doesn't burn. You may have to keep lowering your heat as the sauce thickens.

When sauce is thick, stir in Parmesan cheese and remove from heat. Allow to cool and transfer to a covered container. Refrigerate until needed.
