1 ½ lbs. Fish Fillet
1 c. Pitted Ripe Olives
6 Slices of Bacon Chopped
¾ c. Onion thinly sliced
1 T. Lemon Juice
Pepper, Garlic and Salt to Taste
½ c. Soft Bread Crumbs
2 T. Chopped Parsley

Cut fillets in serving size pieces. Drain and slice olives. Cook bacon until crisp (microwave is best). Remove bacon from fat. Cook onion in fat until tender. Remove onion and fat from baking dish. Put fish in bottom of dish. Arranging thicker pieces toward outside edge. Sprinkle with lemon juice, pepper and garlic salt. Top with cooked onions and olives. Crumble bacon and combine with bread crumbs and parsley. Sprinkle over top of onion parsley and olives. Cover with waxed paper and cook in microwave oven for 8 minutes or until fish flakes easily. Let stand 2 minutes before serving. **You can use a conventional oven. Bake uncovered 350º for 25 to 30 minutes.
