Sour or clobbered raw milk

Heat milk slowly over hot water until lukewarm (95º) and it begins to coagulate. Let stand for a few minutes for curd to collect before turning mass into cheesecloth. Line strainer, drain thoroughly, tie with string and hang until all whey is removed. 1 quart of milk makes 1 cup of cheese.

Collect whey and keep to use as an intestinal flush when needed. Flavor with pineapple, lemon or tomato juice. Pour cream over cheese and chill. Season to taste and serve cold.
