3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 t. lemon juice
3/4 c. flour
1 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
1/2 t. salt

Filling:
1 c. powdered sugar
2 (3 oz.) pkg. cream cheese
4 T. butter
1/2 t. vanilla

Directions:
Directions:
Beat eggs on high speed for 5 minutes. Gradually beat in sugar, then stir in pumpkin and lemon juice. Stir in remaining ingredients. Fold into pumpkin mixture and spread in well greased and floured 15x10x1 inch pan. Top with finely chopped walnuts and bake 15 minutes at 375º.

Prepare a towel sprinkled generously with powdered sugar and after cake is baked, roll hot cake in towel but not tight and cool. When cool, unroll and spread with filling. Rewrap in plastic wrap and then tin foil and chill for several hours or overnight.

Can also make ahead and freeze.
