1 cup white sugar
2 cups flour
1 tsp. salt
2 tsp. cinnamon
4 eggs, beaten
1 cup nuts, broken
1 cup chocolate chips (optional)
1 cup brown sugar, packed
1 1/4 tsp. soda
1 tsp. baking powder
1 cup vegetable oil
3 cups raw carrots, grated or ground
1 cup raisins (optional) as some people do not like raisins cooked.

Directions:

Mix thoroughly sugars, flour, and other dry ingredients. Add oil, eggs, nuts etc. Mix well. Pour into 2 greased loaf pans 5x9 or 9x13. Bake at 375º for 1 hour or until done.
