4 8 oz packages cream cheese at room temperature
2 teaspoons vanilla
1/4 cup cornstarch
1/4 teaspoon salt
1 1/4 cups sugar
4 eggs
1 cup heavy cream
1 can cherry pie filling or 2 cups sliced fresh fruit.

Preheat oven to 350º
Brush bottom and side of a 9 inch spring-form pan with 1 tablespoon of the melted butter
Stir remaining melted butter into vanilla wafer crumbs until crumbs are moistened. Place crumb mixture in the spring-form pan and press evenly onto bottom.
Beat cream cheese until smooth and creamy and free of lumps. Beat in the vanilla. Add the cornstarch and salt.
Add sugar beating on low until blended.
Add eggs, beating just until combined.
Stir in heavy cream.
Pour batter into prepared pan and bake for 1 1/4 to 1 1/2 hours until center is slightly set. Turn oven off and open door slightly, and leave cheesecake in the oven for 15 minutes to several hours. Loosen and remove cake from pan.
Serve with fruit as topping.
