1 1/2 cup sifted flour
1 cup sugar
1 tsp baking powder
1 tsp soda
1 tsp. cinnamon
1/2 tsp. salt

2/3 cup oil
2 eggs
1 cup finely grated carrots
1/2 cup crushed pineapple with syrup
1 tsp. vanilla

Directions:
Directions:
Mix dry ingredients in a bowl Add oil,carrots, pineapple and vanilla. Mix till moistened and then beat 2 minutes with electric mixer. Bake in greased and lightly floured 9X9 pan at 350ºF oven for 35 minutes. Cool and frost with Cream Cheese Frosting.
