2 (15oz.) cans black beans, rinsed and drained
2 c. frozen corn, defrosted and drained
1 can diced tomato with green chili peppers- do not drain
1 sweet onion, chopped
1 clove garlic, minced
3 T. lime juice
1/4 tsp. black pepper
salt to taste
Optional: 1 fresh tomato chopped, 2 tsp fresh chopped cilantro, 1 or 2 cans chopped black olives

Directions:

Mix all the ingredients. Refrigerate overnight to let the flavors get acquainted. Serve with tortilla chips.
