1 cup butter
3/4 cup brown sugar
2 eggs
1 cup carrots, cooked and mashed
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
3/4 cup coconut, shredded

Orange Butter Frosting
1 1/2 cups powdered sugar
3 tbsp. butter
2 tsp. orange peel, grated or concentrated orange juice

Directions:
Directions:
Cream shortening, sugar and eggs. Mix well and add dry ingredients and carrots. Bake at 375º until browned.

Frosting:
Beat all ingredients. If too thick add more orange juice.
