4 cups flour (cake & pastry) eg. Robin Hood
2 cups white sugar
1 tsp. vanilla
1 egg (separated)
1 lb. butter
1 tsp. baking soda
cinnamon to sprinkle
Apples to fill 2 large Pyrex pie plates (small 5-6 apples, large 3-4 apples)

Directions:
Directions:
Combine butter, sugar, egg yolk.
Mix together well, will not appear as dough for rolling
Divide mixture into equal parts (one for each pie)
Dicide separated mixture in half again and with one half, pat (with hands) into pie plate to make bottom crust.
Slice apples into bottom crust, sprinkle each layer with some white sugar and cinnamon. (Fill pie plate to heaping top crust) crumble and pat other half of mixture to make top crust. Pat down with hands to make somewhat smooth. Using eg. white, pat with hand or brush on top of pie crust.
Bake in 300ºF oven until golden brown (1-1 1/2 hrs)

For crunchy crust leave pie uncovered after cooked & cooled.
