1/2 c. sugar
3 T. lemon juice or 1 1/2 lemons
2 t. grated lemon rind
3 T. water

Mix egg yolks, sugar and water. Add lemon juice over low heat and in double boiler or in metal bowl placed in pan of boiling water. Beat constantly with electric hand mixer til mixture thickens and jells or looks like custard. It's critical that mixture is cook enough but not overdone.

Whip egg whites until they stand in peaks and add 1/2 c. sugar slowly, beating thoroughly. Add 1/4 c. of meringue mixture to lemon mixture and pour into a baked pie shell. Bake at 350º till able to touch top of pie and not have it sticky, about 3 minutes. Remove from oven. Top with remaining meringue and return to over, baking till browned on top, about 12 minutes.

Can make more meringue if you like a lot. This is a heavenly pie. Don't cut till completely cooled as it sets more as it cools.
