Pecan Shortbread Recipe

3/4 lb. unsalted butter, room temp
1 c. sugar
t t. vanilla extract
1 t. almond extract
3 1/2 c. all-purpose flour
1/4 t. salt
1 1/2 c. small chopped pecans

Can be doubled with no problems.

Preheat oven to 350*

In an electric mixed cream together the butter and sugar until they are just combined. Add vanilla and almond extracts.

In a separate bowl, sift together the flour and salt, then add them to the butter/sugar mixture.

Add pecans and mix on low until the mixture starts to come together.

Dump onto a flour dusted surface and shape into a flat disk. Wrap in plastic and chill 30 min.

Roll the dough to 1/2 " thick and cut with any size cookie cutter you like.

Place the cookies on an ungreased baking sheet and bake 20 to 25 minutes or until edges begin to brown. Cool on rack.
