1 1/2 C. sugar
1/2 C. water
Pinch of Cream of Tartar
3 egg whites
Pinch salt
1 teas. vanilla (or 1/2 teas. vanilla & 1/2 teas. almond flavoring)

Directions:
Directions:
Mix sugar, water and cream of tartar in heavy saucepan. Stir, cover and bring to a boil slowly. Remove cover and cook until syrup spins long double threads. Meanwhile, beat egg whites until stiff. Remove sugar mixture from heat and pour over stiffly beaten egg whites, beating as you add it. Add salt and vanilla. Beat until glossy and stands in peaks.
