2 cups thinly sliced peeled apples
1/4 cup brown sugar
1 tbsp lemon juice
1/3 cup dried cranberries

1 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
2 tbsp butter, softened
1/3 cup granulated sugar
1 egg
1 tsp vanilla
1/2 cup plain yogurt
2 tbsp sliced almonds, optional

Directions:
Directions:
Preheat oven to 350. Spray an 8 inch round cake pan. Topping. Combine all ingredients for topping in small saucepan. Cook over low heat to medium, stirring often, till soft.
Cake. Combine, flour, baking soda and salt. Cream butter and sugar in small mixer bowl until blended. Add egg and vanilla, beating until smooth. Add flour mixture and yogurt alternately, mixing lightly after each addition. Spread batter evenly in greased pan. Arrrange apple mixture on top in fan pattern.
Bake for 23 to 28 minutes. Cool Sprinkle powder sugar on top before serving is also very nice and appealing.
