Marinade:
1/4 cup olive oil
1 tsp dried sage
1/2 tsp black pepper
Sauce:
1 tbsp olive oil
1/2 onion chopped
1 garlic clove, minced
6 large mushrooms, sliced
1 tbsp flour
1/2 cup beef or chicken stock
1/2 cup red wine
1 tbsp tomato paste
3 tbsp fresh parsley, chopped
salt and pepper to taste

Combine ingredients for the marinade. Add val steaks and marinade for 30 minutes. To make the sauce, heat oil in a large fry pan. Saute the onion, garlic and mushrooms until golden. Stir in the the flour. Add remaining ingredients and simmer over moderate heat for 8 to 10 minutes, stirring occasionally. Heat another fry pan and add marinated steaks. Cover and cook for 6-7 minutes on each side. Add the sauce and simmer for a few minutes. Slice horizontally and to serve.
