1 box of red velvet cake mix, prepare per package directions for the 9 X 13 size
1 16 ounce can of cream cheese frosting
½ cup chopped crème de menthe baking bits
2 - 7 ounce containers of Baker's dipping chocolate (Heat and dip version)
1 cup white chocolate chips

Line two baking sheets with parchment paper. Bake red velvet cake according to package directions and cool completely. Crumble cake into a large mixing bowl. Stir in the can of cream cheese frosting until well incorporated. Stir in crème de menthe baking bits. Spoon cake mixture out using a 1 tablespoon sized stainless steel scoop with spring action. Form into quarter sized balls. Place on parchment lined baking sheets and refrigerate for 2 hours. Melt one container of Baker's dipping chocolate in the microwave according to package directions. Only melt one container at a time to avoid hardening of the chocolate. Roll balls in chocolate gently, remove and allow excess chocolate to drip off before placing on parchment. Refrigerate for 15 minutes to set chocolate. Melt white chocolate in the microwave in 30 second bursts, stirring between each until melted and smooth. Drizzle over the tops of the red velvet chocolates. Use a fork or a Ziploc bag with the end snipped off. Store in a covered container until ready to serve.
