1 1/2 C all purpose flour, 1 tsp. baking soda, 2 tsp. baking powder, 2 tsp. cinnamon, 1/2 tsp. salt, 1 C vegetable oil, 1 1/2 C brown sugar, firmly packed, 3 eggs, 1/2 C chopped English walnuts, 1/2 C canned crushed pineapple in juice, drained, 1/2 C raisins, 1 C finely shredded carrots

Sift first 5 ingredients into mixing bowl and set aside. In a separate bowl, whisk together the oil, sugar and eggs. Stir the liquid mixture into the flour mixture, mix well. Add the next 4 ingredients: stir again. Grease and flour 2 9" square pan or four mini-loaf pans. Fill the pans 2/3 full with batter. Bake at 350 degrees for about 40 minutes. (Mini loaves take about 30 minutes.) Yields one 9" square or four 3" x 6" mini loaves.
