4-5 lb boneless chuck roast
salt & pepper
flour
oil
4 carrots
2 onion
1stalks celery
5 lg garlic cloves
2 c red wine
1 28 oz can plum tomatoes
1 c beef stock
1 beef bouillon cube
1 tbs butter

Directions:
Directions:
Preheat oven 325º
Pat roast dry with paper towels. Season with salt & pepper. Dredge whole roast in flour, including sides. In lg Dutch oven, heat 2 tbs oil over medium heat. Add roast and sear @ 4-5 mins on all sides. Remove roast to large plate.
Add 2 tbs oil to Dutch oven. Add vegetables, garlic, salt & pepper and cook over medium heat for 10 - 15 min, stirring occasionally, until tender but not browned. Add wine and bring to boil. Add tomatoes, stock, bouillon, 2 tsp salt and 1 tsp pepper. Put roast back in pot. and bring to a boil.
Place in oven for 2 1/2 hours. Turn oven down to 250º after 1 hr to keep sauce at a simmer.
Remove roast and vegetables to platter. Thicken sauce for gravy.
