2 c. fresh or frozen corn
2 c. each cubed zucchini, yellow squash and eggplant
2 c. med. green peppers & sweet red peppers cut into 1 in. pieces
4 finger hot peppers, diced
2 lg. onions, chopped
1/2 c. garlic cloves, peeled
1/4 c. olive oil
4 qt. beef broth
2 cans (14.5 oz. each) stewed tomatoes
2 cans (14.5 oz. each) tomato puree
1/4 c. lime juice
2 lb. ground beef, browned
4 tsp. chili powder
1 1/4 tsp. cayenne pepper
1 tsp. ground cumin
1/2 c. butter
1/2 c. all-purpose flour
3 cans (15 oz.) each, kidney beans, rinsed and drained
1/2 c. minced fresh cilantro

Place vegetables and garlic in a roasting pan. Drizzle with oil; toss to coat. Cover and bake at 400º for 20 - 30 minutes or until tender. Cool slightly. Remove and chop garlic.
In a dutch oven or soup kettle, combine broth, tomatoes, tomato puree, lime juice, chili powder, cayenne and cumin. Bring to a boil. Reduce heat; simmer, uncovered for 25 - 35 minutes or until mixture is reduced by a quarter.
In a large saucepan or dutch oven, melt butter; stir in flour until smooth. Cook and stir until bubbly and starting to brown. Slowly whisk into tomato mixture. Add roasted veggies, garlic, beans, cilantro and beef.
Simmer, uncovered until chili reaches desired thickness.
Yield: 24 servings.
