Ingredients: 1/4 cup white wine 2 tbsp. soy sauce, low-sodium 2 tbsp. sesame oil 2 tbsp. brown sugar 1 tbsp. sesame seeds 1 tbsp. chopped garlic 1 tsp. minced ginger 1 tsp. dry mustard 1/4 tsp pepper 6 (5 oz.) chicken breasts 1 cup mandarin oranges 1/2 cup matchstick carrots 1/3 cup edamame 1/4 cup diced red pepper 1/2 tsp. minced ginger 2 tbsp. brown sugar 1 tbsp. sesame oil 1 tbsp. soy sauce, low-sodium

Directions:PREPARATION: In a large bowl combine the first 9 ingredients. Add the chicken breasts and turn to coat both sides of the chicken with the seasonings. Cover and place in the refrigerator for 2 hours. In a medium bowl combine the remaining ingredients. Cover and place in the refrigerator until ready to serve. GRILL: Preheat grill on medium-hot. Cook chicken breasts 7-10 minutes per side or until internal temp reaches 165°F. OVEN: Preheat oven to 400°F. Spray a 9 x 13 baking pan with cooking spray. Place the marinated chicken breasts evenly in the pan and cook 20-30 minutes or until internal temperature reaches 165°F. TO SERVE: Serve chicken breasts topped with the mandarin salad (Can be served cold or at room temp). Or, Slice chicken breasts thinly, toss with Mandarin Salad and favorite salad greens for the best Asian Salad ever! |
