Sauce:
1 onion chopped
1 can whole tomatoes 15 oz. (chop)
2 cans chopped green chiles OR
1 can chopped jalapenos
1 teaspoon oregano
1 teaspoon cumin
2 cloves crushed garlic
1 tablespoon chili powder
1 large can tomato sauce

1 lb. sausage

8 eggs, scrambled
1 lbs. shredded cheese
1 bag shredded hash browns
flour tortillas

Directions:
Directions:
In large pot brown sausage, then remove to separate bowl. Add garlic & onion. Saute lightly. Add 1 1/2 qts. water, tomatoes, chilies. oregano, cumin and chili powder. Cook til garlic and onion are tender. Can thicken with cornstarch or flour if desired.

Cover bottom of 9 x 13 baking pan with small layer of sauce.

Build burritos, with hash brown, eggs, sausage and cheese. Roll and lay in pan. Cover with sauce and cheese. Bake at 350º for 20 to 25 min. til heated thru.

You can choose tortilla size. Using about a tablespoon of each stuffing, you can adjust amount to your liking. Just experiment with amounts.
