2 lb. small red potatoes, scrubbed
6 Tbsp. extra-virgin olive oil, divided

1 tsp. chopped fresh thyme leaves
Kosher salt and ground black pepper

Directions:
Directions:
Preheat oven to 425 degrees. Toss potatoes and salt and pepper in a large bowl with 3 Tbsp. olive oil to coat. Arrange potatoes on a rimmed baking sheet and roast in hot oven for 40 minutes or until potatoes are crisp. Remove from oven, smash lightly with a fork or potato masher, drizzle with the remaining olive oil, and return to the oven for an additional 10 minutes or until crisp. Remove and sprinkle with thyme before serving.
