3 large eggs
3/4 cup white sugar
1/3 cup fresh (not bottled) lemon juice
2 tablespoons unsalted butter, at room temperature
1 tablespoon lemon zest

Directions:
Directions:
In a stainless steel bowl, placed over a saucepan of simmering water, whisk together the eggs, sugar, and lemon juice until blended.

Cook, whisking, until the mixture becomes pale in color and quite thick. This will take anywhere from 4-8 minutes. Remove from heat and immediately pour through a fine strainer to remove any lumps if necessary. Cut the butter into small pieces and whisk into the mixture until the butter has melted. Add the lemon zest, and pour into a prepared pie crust.

I had extra pie dough left after making tons of apple pies (our apple trees went crazy this year) so decided to make a lemon pie. However, when I looked in the pantry, I didn't have any lemon pie filling, so went on the internet and found this recipe. Tried it out and it is devine. The only thing I changed is it called for 4 tbsp of butter and I cut that in half. Super easy recipe.
