2 c. sugar
4 eggs
1 1/3 c. oil
3 c. grated carrots
1 c. raisins
1 c. walnuts or pecans
1 tsp. vanilla
3 c. sifted flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

Directions:
Directions:
Grate carrots until you have 3 cups. Chop walnuts. Add boiling water to raisins to plump.

Sift dry ingredients together. Beat sugar and eggs until light and fluffy. Stir in dry ingredients and oil alternately, starting and ending with the flour. Stir in vanilla, grated carrots and raisins.
Pour into 3 oiled loaf pans and back 70 minutes at 350º

Nellie always adds 1 cup red or green cherries to this recipe as well (but Denise doesn't like them and since it is I who is typing this in, I omitted them)!
