1 leg of lamb (5 - 7 lb.) deboned and cut into 2 in. cubes

Marinade:
2 cloves garlic, minced
3 chopped onions
2 tbsp. olive oil
1/3 c. lemon juice
1/2 tsp. oregano
1/2 tsp. black pepper
1/4 tsp. thyme
Pinch of rosemary
1 1/2 tsp. salt

Directions:
Marinate meat in mixture overnight, turning meat several times. Skewer and grill lamb, chunks of tomato, green and red pepper, zucchini, etc. Cook until meat is done and vegetables are tender.
