9-inch baked pastry shell
¾ C sugar
3 T cornstarch or 1/3 C flour
1 C water
1 tsp grated fresh lemon peel
¼ -1/3 C lemon juice
2 egg yolks, slightly beaten (reserve whites)
1 3-oz package cream cheese
Reserved 2 egg whites
¼ C sugar

Directions:
In saucepan, combine ¾ C sugar, cornstarch, water, lemon peel, lemon juice and slightly beaten egg yolks (reserve whites in slightly smaller mixer bowl), blend well. Cook over medium heat, stirring constantly until mixture just begins to bubble. Remove from heat. Add cream cheese. Stir until well combined. Cool while preparing egg white meringue. In small mixing bowl, beat egg whites at high speed, until foamy. Gradually add ¼ C sugar, beating until meringue holds stiff peaks. Fold into lemon mixture. Spoon into baked pastry shell. Chill at least 2 hours before serving.
