1 lb. asparagus, cut into 1/2" pieces
10 slices of bacon
2 unbaked pie shells
1 egg white, beaten
4 eggs
1 1/2 c. half and half
1/4 tsp. nutmeg
2 c. shredded Swiss cheese

Directions:
Directions:
Steam asparagus until tender but still firm, approximately 2-6 minutes. Fry bacon and crumble, set aside. Brush pie shells with egg white. Sprinkle bacon and asparagus into pie shells. In a bowl beat eggs, half and half and nutmeg. Cover bacon and asparagus with Swiss cheese, pour egg mixture over cheese. Bake uncovered at 400º for 35-40 minutes.
