Ingredients: 2-3 T. olive oil
3 large chicken breasts, cut into 1-in. pieces
2 cloves garlic, minced
1 lb. whole wheat penne
1 pt. grape tomatoes, halved
2 large heads of broccoli, cut into small "trees"
1 1/2 c. pesto (homemade or store bought in a pinch)
salt and pepper to taste
Parmesan cheese

Directions:Cut chicken breasts into 1-in. pieces while oil heats up in large skillet with high sides. Add garlic to oil and sauté 2-3 minutes. Add in chicken and season with salt and pepper. Cook chicken on all sides. Meanwhile, bring water to a boil for pasta and cook according to directions on the package. Add in halved grape tomatoes to chicken and cook until tomatoes start to soften. In a large bowl, steam broccoli in microwave with about 1/4 c. water (takes about 4 minutes). Drain the broccoli and add to pan with chicken, garlic and tomatoes. Once the pasta is cooked, add to the pan with everything else and toss with pesto while the pasta is still hot. Top each serving with Parmesan cheese. |

Notes: This recipe is great during the summer when your basil plants are 3 feet tall and the grape tomatoes are abundant and cheap. I suggest drinking some Pinot Noir while preparing this one!
