Large baking potatoes
Flaky sea salt
Olive oil
Arugula

Dressing:
1 Tbs Champagne vinegar
1 tsp Dijon mustard
egg yolk
1/2 cup olive oil
2 Tbs Parmesan Cheese
2 tsp fresh lemon juice

Directions:
Directions:
Scrub potatoes, prick with fork and sprinkle with sea salt. Bake until tender at 400º for an hour or until done.
Dressing: whisk vinegar, mustard, egg yolk and olive oil. Whisk in cheese and lemon juice.
Slice top of potato with a cross. Spoon out a bit of the potato filling. Add butter or olive oil to each potaot. Toss the arugula with the dressing and then pile it into the potatoe.
