1 - 2 lbs salmon
4 cups spinach
8 Tbs diced tomatoes
8 Tbs kalamata olives - sliced
8 artichoke hearts - chopped
4 Tbs feta cheese

Directions:
Directions:
Dice tomatoes, slice olives and chop artichokes. Bake salmon uncovered on a greased baking dish. Coat bottom of a saute pan with oil and heat to medium high. Saute tomatoes, olives and artichokes for 2 to 3 minutes. Add the spinach last. Place salmon on a plate, put sauted vegetables on top and sprinkle with feta cheese. Serve over rice if desired.
